Ingredients: 13×9 Pyrex greased

2-3 zucchini sliced thin
1 lb ground Turkey, sausage or beef ..I use Turkey
1 packet dry Italian salad dressing mix
Black pepper for seasoning
1/4 cup chopped onion
1/4 cup chopped bell pepper
2 cups mozzarella cheese
2-3 cloves garlic
1 glass jar of pizza sauce equal to 1 1/2 cups
Sliced Pepperoni
Optional items: mushrooms , olives or any pizza toppings you like

Directions:Sauté onions and garlic until translucent with oil, add your choice of meat and Italian season packet & pepper. If using sausage season to taste only.. cook meat thoroughly. Then add all zucchini slices and pizza sauce stir and cover simmer for 4 minutes remove from heat.
Place 1/2 of zucchini mixture into 13×9 pan. Top with 1 cup mozzarella cheese and add remaining zucchini meat mixture. Add chopped bell peppers and sliced pepperoni and any other choice toppings and cover with remaining 1 cup shredded mozzarella.
Place in a 400 degree preheated oven for 25 minutes
Let cool 5 minutes |
