2 cups sugar
2 tablespoons cornmeal
1 tablespoon flour
1/4 teaspoon salt
1/2 cup butter melted
1/4 cup milk
1 tablespoon white vinegar
1/2 teaspoon vanilla
4 eggs, lightly beaten
Powdered sugar for garnish

Directions:
Directions:
Bake a pie crust using weights on aluminum foil. Bake 425 degrees for 1-5 minutes, remove weights and foil and bake 2 minutes more or until golden brown. Cool.
Mix sugar, cornmeal, flour, salt, melted butter, milk, vinegar and vanilla until blended.
Add eggs and stir. Pour into piecrust. Bake at 350 degrees for 50-55 minutes. Shield edge of crust with foil after 10 minutes to prevent excessive browning. Cool completely. Garnish with powdered sugar.
NOTE: May use this recipe for coconut cream pie, just add 1 cup toasted coconut before pouring into pie crust. Bake as directed above.
