For the turkey broth:

2 pounds turkey parts, including neck, wings, thighs and giblets
12 cups water
1 large onion, quartered
1 small parslip, peeled and sliced
1 medium carrot, peeled and sliced
3-4 springs parsley
1 celery stalk
2 large cloves garlic
2 medium leek, chopped

For the gravy:
4 cups turkey broth
4 T flour
2 T turkey fat

Directions:
Directions:
For the broth: combine all in large pot. Bring to a boil. Reduce heat and simmer gently for 2 hours. During hte first 30 minutes, skim off any foam that rises to the surface.

Strain the broth. Reserve carrot, onion, parsnip and garlic. Discard other vegetables.

Cool broth and refrigerate overnight. Skim off any fat and reserve.

Pree reserved vegetable with 1.2 cup trukey broth. Blend in remaining broth. Heat the turkey fat in a saucepan. Using a wooden spoon, stir in flour which will gather into a soft ball. Cook, strring, two minuts. Slowlw whisk in 1/4 cup broth puree. Add remaining puree. Bring to a boil then immediately remove from heat. Season with salt and pepper.
