"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Spinach with Garlic, by Louise, is from South Cove Savory,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
Extra Virgin Olive Oil 4 cloves garlic finely chopped 1 small bag baby spinach Crushed red pepper seeds
Generously coat the bottom of a large frying pan with olive oil. Add garlic and stir until softened and slightly browned over medium heat. Reduce heat and add the spinach. Reduce heat to medium low. Cover for just a moment or 2 and then stir the bottom to the top. There is no need to cover again. Just stir constantly until the spinach is wilted but still very bright green. Toss with crushed red pepper seeds if you want it.
