Per one package of egg roll wrappers
1/2 lb ground beef (note: they could be made with ground chicken, or meat could be omitted for a vegetarian option)
1 bag shredded coleslaw mix
1 onion (minced)
3 cloves garlic (minced)

Sweet and Sour Sauce:
1 T oil 1 C pineapple juice
3 T cornstarch
1 T soy sauce
3 T vinegar
6 T cold water
1/2 C brown sugar

For each pkg of wrappers, you'll need 1 bag of shredded coleslaw mix, one chopped onion, chopped garlic, salt/pepper, and 1/2-3/4# hamburger. Brown the beef and onions together with salt/pepper; fat from burger works well to cook onions. When done, add garlic for about 20 seconds so it doesn't get bitter. Quickly dump in coleslaw mix, stir, and cook down with lots of salt/pepper. Fill wrappers, but not too full, being careful to not tear wrappers. Instructions on package, re: moistening edge to close. Note: moisture makes wrappers sticky, so careful about them touching each other while waiting for fryer, they'll stick, then rip when you grab one. Ugh. Important: use slotted spoon to fill wrappers, as you don't want any liquid! Fry in a little oil (1"?), turning when golden on bottom. Temp is important, as I've burned many! Best method for me is to use my electric skillet w/ sides, to have even heat. Only took me 35 years to figure that out. :) Drain on paper towels or pile on cookie cooling rack on cookie sheet, keeping warm in oven (if you're making 120 like I do) These freeze well, and are best re-heated in oven to get crispy.

Combine oil and juice in saucepan. In bowl, stir together rest of ingredients. Add to saucepan. Cook over medium heat until thickened, stirring frequently.

Additional note from my mom:
I also like to buy Chinese sweet hot mustard, and serve this meal with rice. Pineapple would be a great side, too. :) This is the same sauce I use for Sweet & Sour Meatballs, which can be made ahead and frozen (or bought at Costco in the giant bag). Another meal idea, easy for older kids to prepare, just dump meatballs in crock, cover in sauce (can add pineapple chunks), and make a pot of rice.

Note from Amy: This is probably hands down, our family's favorite meal and it has been enjoyed countless times for birthdays, graduations and other special family occasions. The Rascal crew went NUTS for them this past summer, so adoration for this family meal must be in their DNA ;)
