1 cup butter, softened
2 cups sugar
5 eggs
1 teaspoon soda
Dash salt
2 3/4 cups cake flour
1 teaspoon baking powder
1 cup buttermilk
1 3/4 teaspoons vanilla extract

Directions:
Directions:
In an electric stand mixer, cream butter & sugar for 15 minutes on medium/high speed
Add eggs, beating well after each addition.
Sift dry ingredients together and add to creamed mixture alternately with butter milk...ending with dry ingredients.
Stir in vanilla extract well.

Pour into 3 or 4 9" round cake pans or into a sheet cake pan.

Bake on 350 degrees, checking at 20 minutes. You can check if done with a toothpick inserted in the center that comes out clean. The cake will have risen and started to pull away from the sides of the pan.
Cool and frost with the frosting of your choice, e.g., chocolate, cream cheese for coconut.

For a coconut cake, substitute 3/4 teaspoon of vanilla extract with pure coconut extract

This yellow cake recipe has been our family go to cake for many birthdays and special events. You can make it lemon by adding lemon zest and extract. The options are limited only by your imagination.
