1 single-crust 9-inch (23-cm) unbaked pie shell
1 t (15 mL) olive oil
8 strips (6 02/170 g) lean bacon
1 medium onion, chopped fine
4 eggs, plus 2 egg yolks
1 ⅓ C (320 mL) whipping cream
4 T (15 mL) chopped chives
½ C (125 mL/50 g) cheddar cheese, freshly grated
½ C (125 mL./50 g) Gruyère cheese, freshly grated

1. Preheat oven to 350 F (180 C). Line a nine-inch (23-cm) deep dish pie pan with pastry. Fill pastry shell with dried beans to maintain shape of pastry during baking.
2. Bake in preheated oven for 20 minutes, until half-baked. Remove beans and store to use another time.
3. In a large, heavy frying pan over medium-high heat, heat oil and fry bacon until crisp. Drain on paper towels, then crumble into small pieces.
4. Heat the same pan and its mixture of oil and fat over medium heat and cook onions gently for 10 minutes, until softened. Drain on paper towels. In a medium bowl, whisk eggs and egg yolks together. Stir in cream, chives, both cheeses, bacon and onions. Season to taste with salt and pepper. Pour egg mixture into half-baked pie shell and return to heated oven.
5. Bake 45 minutes to 1 hour - checking for doneness. Put toothpick into the quiche to test - if the toothpick or knife come out clean it is done.
