Yeast Dough:
500 gr Flour
80 gr butter
salt (2 tsp)
1/8 liter milk + 1/8 liter water (warm)

Gulasch
1 Onion
4 cloves garlic
3 potatoes cut in cubes
1/4 liter water
1 lb (??) Beef chuck roast Note: Ute omitted how much beef when she wrote out the recipe!
salt, paprika and black pepper to taste

Directions:

Mix the Dampfnnudlen dough ingredients together and let rise!

Meanwhile, fry the onion, garlic, diced potatoes and fry. Add in the cubed beef, bullion and water. Cook together

After dough has risen, punch down and make into balls. Place the balls of dough on top of the meat and potato mixture. Cover with a lid (well sealed) and let cook for 35 minutes on medium heat (do not open the lid while cooking!)

The Glatthaar family were dear neighbors and friends to me when I lived in Mazar-e-Sharif, Afghanistan. They are German and worked for the same NGO as me. They were the kindest, most hospitable family I have ever known and being in their home was always a balm to my heart. My first Christmas in Afghanistan was also the first Christmas in my life that I was away from my family. Secretly I was homesick and so worried about being alone but Ute came to my home and to invite me to their home and said, "Amy it just wouldn't be Christmas if you didn't join us!" Her children all prepared thoughtful gifts for me and for my British housemate Faith and helped us to feel deeply apart of their warm family celebrations. So much of how Anders and I have created own home and family life is based on the close friendship and years spent together with Thomas and Ute and their dear children, Yannik, Janina, identical twin daughters Yadidya and Jael. This meal was one of their family favorites, and such a hearty, comfortable meal to enjoy especially in the dark winter months. I remember us enjoying it with sour cream and a nice green salad with homemade balsamic dressing.
