Notes: The Glatthaar family were dear neighbors and friends to me when I lived in Mazar-e-Sharif, Afghanistan. They are German and worked for the same NGO as me. They were the kindest, most hospitable family I have ever known and being in their home was always a balm to my heart. My first Christmas in Afghanistan was also the first Christmas in my life that I was away from my family. Secretly I was homesick and so worried about being alone but Ute came to my home and to invite me to their home and said, "Amy it just wouldn't be Christmas if you didn't join us!" Her children all prepared thoughtful gifts for me and for my British housemate Faith and helped us to feel deeply apart of their warm family celebrations. So much of how Anders and I have created own home and family life is based on the close friendship and years spent together with Thomas and Ute and their dear children, Yannik, Janina, identical twin daughters Yadidya and Jael. This meal was one of their family favorites, and such a hearty, comfortable meal to enjoy especially in the dark winter months. I remember us enjoying it with sour cream and a nice green salad with homemade balsamic dressing.
