2 lbs. potatoes

Dressing:
6 tbsp. extra virgin olive oil
Juice of 1 lemon
1 clove of garlic, finely chopped
2 tbsp. chopped fresh herbs (parsley, basil, thyme, and/or oregano)
Salt
Freshly ground black pepper

Directions:
Directions:
Wash potatoes - Do Not Peel. Boil or steam until tender. When cool enough to handle, peel them. Cut potatoes into large dice.

While the potatoes are cooking, mix together all of the dressing ingredients.

Pour the dressing over the potatoes while they are still warm.

Serve at room temperature or warm.
