leftover fish or one can salmon
2 medium potatoes cooked, peeled and mashed (note: if you don't have leftover potatoes on hand, you can sub in Panko bread crumbs)
2 Eggs
1 Onion or 6 green onions minced
1/2 c. fresh parmesan cheese
1/2 t salt and 1/2 t pepper (possibly more of both- to taste)

Mix all together by hand. Shape into hamburger size paties and saute in oil until golden brown and crisp

This is a versatile recipe using leftovers or pantry staples that can be adapted to use whatever is on hand such as lemon juice, crushed crackers, sauteed yellow onion, corn meal, fresh dill etc

These are delicious served on top of green salad, in a bun or with couscous...
