1½ pound small Yukon Gold potatoes
2 Tbl olive oil
2 smashed garlic cloves
¾ tsp kosher salt
Pepper to taste
½ cup finely shredded cheddar cheese
Chopped chives

Directions:
Directions:
Microwave potatoes, turning halfway through, until tender, about 10-12 minutes and let cool slightly.
Break into chunks and toss with olive oil, garlic, salt and pepper.
Roast on baking sheet at 450º, stirring once, until browned and crisp, about 30 minutes. Sprinkle with cheddar cheese and chopped chives.
