3 ears sweet corn (boiled and removed from the cob)
1 small red bell pepper, seeded and finely chopped
1 jalapeño, minced
handful of cilantro chopped

Dressing
1 lime, juiced
1 t chili powder
1 t salt
1/4 t black pepper

Directions:
Directions:
Add the corn to the boiling water and cook, uncovered, until the kernels are tender and golden. Exactly how long to boil corn on the cob will vary based on how much you’re cooking and how you like your corn. I typically go for 3-5 minutes, which shouldn’t be much longer than the time it takes for the water to return to a boil after you add the corn.

Carefully remove kernels from cob using a sharp knife or specific tool. Place corn and remaining ingredients in a medium bowl. Add dressing ingredients.

Grilled shrimp or chicken round out this summer meal beautifully.
