Chuck Roast, about 3 lbs
6 onions, chopped
8 cloves garlic, minced
3 small cans tomato paste
1 T sugar
about 8 cans water
bay leaves, thyme, oregano
salt and pepper

Directions:
Directions:
Brown the roast in oil. Remove the meat. To the big pn, add the chopped onions and garlic. cook until the onions are soft. Add the tomato paste and sugar. Cook on low heat, stirring often, until the paste darkens in color, about 20 min. Scrape the bottom often or it burns. Add the water, seasoning and return the roast to the pan. Simmer 1 1/2 hours
