1 Tbsp butter
1/2 medium yellow onion (I use a sweet onion)
4 eggs, lightly beaten
1 C half and half
1/4 tsp salt and pepper
1 1/2 C diced ham
1 C shredded Swiss cheese
1 C shredded Cheddar cheese
1 deep dish frozen pie crust

Directions:
Directions:
Pretreat oven to 375º, melt butter in a small nonstick pan and cook onion until soft. Let cool slightly. In a large bowl, whisk together eggs, half and half, salt and pepper. Stir in ham and both cheeses (leave a small amount of cheese to sprinkle on top). Stir in cooked onion. Pour filing into pie crust, set on a baking sheet and place in oven for 40 to 45 minutes, or until set. Serve warm or chilled. You can also freeze until later.

Over the holidays we always end up with a lot of left over ham so we started making quiches with it. It’s easy, filling and you can eat for breakfast, lunch or dinner. You don’t have to use Swiss cheese if you don’t have it. Just use what you have in the fridge!
