Upside Down Apple Cake Recipe

6 T butter
½ c brown sugar
¼ tsp vanilla

1½ c flour
1½ tsp baking powder
1 tsp cinnamon, heaping
¼ tsp ground cloves
¼ tsp ground ginger
½ tsp salt

½ c soft butter
1 c sugar
2 eggs
1 tsp vanilla
6 T milk

⅓ c chopped pecans
2 apples

Grease the sides of a 9 inch cake pan. Preheat oven to 350º.

Put butter and brown sugar in microwave safe bowl and cook, stirring periodically, till sugar melts and mixture begins to boil. Remove, add vanilla and stir again, then pour into a 9 inch cake pan. Let cool.

Meanwhile, mix the dry ingredients together. Set aside

Cream butter and sugar till fluffy. Beat in eggs and vanilla. Scrape sides and add milk along with the flour mixture. Beat till well mixed. Set aside.

Sprinkle pecans over the cooling brown sugar mixture. Peel (opt.), core and chop or slice the apples. Arrange them over the pecans. Spread the batter evenly over the apples.

Bake in preheated 350º oven about 45 min or till done. (f it's getting too brown, place a sheet of foil loosely over the top for the last 10 min of cooking time.) Remove from oven and cool 10 min, then invert onto a plate to finish cooling. If some apples stick to the pan, scrape them back onto the cake.
