1½ pounds boneless, skinless chicken thighs
½ tsp salt
1 T Asian fish sauce
1 T soy sauce
1 T brown sugar
2 tsp peanut oil
zest and juice of 1 lime
1 inch piece ginger, finely chopped
2 cloves garlic, finely chopped
pinch of red pepper flakes
Chopped cilantro, scallions, or parsley for serving (optional)

After rinsing, pat chicken dry and season with salt. Mix all of the other ingredients together and pour over chicken in a large bowl or sturdy ziplock bag. Let sit at least 30 minutes or refrigerate longer (max overnight). Arrange chicken in single layer on a baking sheet lined with foil. Broil the chicken for ~7 minutes on each side until browned and done all the way through. Serve with rice or noodles with chopped green or scallions as a topping.

This recipe comes from "Dinner, changing the game" by Melissa Clark. I received this cookbook as a gift from Anne Keady and it's full of great recipes. You could substitute chicken breast chunks and broil longer but thighs are really best. Marinating overnight is recommended.
