2 lbs pork belly, cubed
1 head garlic, peeled and crushed (no need to chop)
2 bay leaves
1 tsp fresh ground pepper
1.5 cups water
3/4 cup vinegar
1/2 cup soy sauce
1 tbsp dark soy sauce (optional)
1 tsp veg oil

Fried Rice:
8 cups cooked white rice
3 cloves of garlic
1 tbsp veg oil
salt & pepper

Optional:
2 tomatoes, diced
3 green onions, chopped
salt and pepper
fried egg

Directions:
Directions:
In a med-high pot over med heat, add all ingredients. Let it come to a boil, then turn down heat to simmer.

Cook covered for 30 mins.

Remove cover and cook for another 45min, or until sauce has reduced 75%

Remove the meat from the pot. Strain and save the sauce (drain off the extra fat). Save any pieces of garlic aside.

In a pan, add the veg oil. Once heated, add the pork belly and pan fry until it caramelizes. Remove the meat from the pan and keep warm.

To make the fried rice - add the remaining oil to the pan. Add garlic (including any cooked ones from the adobo). Pan fry until fragrant. Add cooked rice and stir fry for 5 mins. Add saved adobo sauce. Season to taste.

You can add the meat back to the mixture and serve the adobo and rice as one dish.

Optional garnish:
- Side salad of diced tomatoes and chopped green onions.
- Fried egg over the fried rice
