2 lbs short ribs, chunks
1 yellow onion
3 tomatoes
2 hot long green peppers
1 package Mama Sita Sinigang sa Sampaloc mix (Tamarind Mix)
1 lemon (optional)
2 cups spinach or other green leafy vegetable
3 taro root (optional)
2 quarts water for initial boiling
2 quarts water for actual soup

Directions:
Directions:
Boil beef in water for 5mins, take off the heat, drain and wash beef to clean.

Put the beef back in the pot, add 2 quarts of water and all ingredients EXCEPT the pepper, spinach, taro and lemon juice.

Boil for 5 mins, then let simmer until beef is to tender (about 1.5 - 2 hours)

Add taro and pepper and cook for another 15mins

Add lemon juice and spinach, simmer for 5mins.

Serve with rice and fish sauce as condiment.
