Strawberry Mousse Recipe

⅓ c cold water
1 T (1packet) unflavored gelatin*

4 c ripe strawberries, cut in half
¾ c sugar
1 T lemon juice

2 c whipping cream, chilled

Sprinkle gelatin over water and let sit 5 min.

Whirl the strawberries in a food processor till roughly chopped (about pea sized).
Pour into a bowl and stir in sugar and lemon juice.

Heat gelatin mixture over hot water or in microwave and stir to melt. (If you use a microwave heat it in 5 second zaps to prevent overheating.) Stir the warm gelatin into the strawberry mixture and let cool until it thickens slightly.

Whip the cream until it just holds its shape (med. peaks). Use a rubber spatula to gently fold the cream into the cooled strawberry mixture. When completelyl mixed, spoon into serving dishes. Cover tightly and chill at least 1 hour before serving.

* To use this as a cake filling, use 2 packets of gelatin instead of just one. Fill the cake and chill at least 3 hours before icing or serving.
