2 c whipping cream, very cold
1 c prepared lemon curd
Zest and juice of 1 lemon
1 pkg. graham crackers*

Directions:
Directions:
In a large bowl, whip the cream till soft peaks form. Add the lemon curd, zest and juice and continue whipping on low speed till everything is mixed. Remove beaters and scrape the bowl with a spatula to make sure everything is well mixed.

Spread a thin layer of lemon mixture into the bottom of a 9 inch square pan. Lay graham crackers on top in one layer. Spread ⅓ of the remaining filling over the graham crackers.

Repeat with 2 more layers of graham crackers and filling. Cover tightly and refrigerate at least 3 hours for graham crackers to soften.

* For variation, use ginger snaps instead of graham crackers.
