3 tbps balsamic vinegar
1 tbps soy sauce
4 tsp Dijon mustard
1/4 cup canola oil
1/4 cup extra-virgin olive oil
1/2 tsp salt
1/4 tsp freshly ground pepper
1 small shallot, minced or grated on a microplane (about 1 tbps)
1 medium clove of garlic, minced or grated on a microplane (about 1 tsp)

Directions:

Combine all ingredients in a small container. I use a glass mason jar. Seal the container and shake vigorously until emulsified. The vinaigrette will keep in the refrigerator for up to 3 months; shake vigorously before using. We serve this dressing over arugula with golden raisins and fresh Parmesan cheese.
