One-Pot Cajun Pasta Recipe

2 T Olive Oil
2 Chicken Breasts, diced
8 oz Andouille or Smoked Sausage, sliced
3 cloves garlic, minced
1/2 yellow onion, sliced
1 red pepper, sliced
1 green pepper, sliced
2 c mushrooms, sliced
16 oz pasta of choice
5 c chicken broth
1/2 c heavy cream
1 c parmesan cheese, shredded
1 T cajun seasoning (see below)
optional green onion for garnish

CAJUN SPICE
1 tsp cayenne pepper
1 tsp onion powder
1 tsp paprika
1 tsp garlic powder
1 tsp salt
1 tsp pepper

Directions:

1. Pour olive oil in pot.
2. Add chicken and cover with cajun seasoning. Stir until chicken is evenly seasoned.
3. Add sausage and stir. Cook the meat for 5-10 minutes or until chicken is cooked.
4. Add garlic, onion, peppers, and mushrooms. Stir continually for 3-5 minutes.
5. Add dry pasta and chicken broth. Stir until everything is well mixed.
6. Cover the pot and bring to a boil. Once boiling bring down heat and keep covered at a simmer for 10 minutes (stirring every 2).
7. If there is excess liquid add a little cornstarch to thicken.
8. Add heavy cream and parmesan. Stir until well blended.
9. Garnish with green onion and extra parmesan. Salt and pepper to taste.
