2½ lbs. Boneless pork shoulder, cut into bite size
3 T. Olive oil
½ tsp. Salt
⅛ tsp. Black pepper
3 tsp. Ground cumin
1 large onion, cut into slivers
1-4 oz. Can diced green chiles with liquid
2 garlic cloves, minced
½ cup chicken broth
1 pkg. medium flour tortillas
1-28 oz. Can green enchilada sauce
8 oz. shredded pepper jack cheese
1 cup sour cream




Directions:
Directions:
Preheat oven to 350º. In a large Dutch oven pot, heat oil. Add pork pieces sprinkle with the salt, cumin and pepper. Cook til browned. Stir in onions, garlic and green chiles. Add chicken broth. Cover and bake in oven 1 hour. Remove from oven and fill tortillas, roll up and place in 9x13 baking dish with bottom covered with green sauce(1 cup). Pour rest of green sauce over top of tortillas. Cover with cheese. Bake ½ hour uncovered at 350º. Serve with sour cream. Serves 8 to 10.
