Preheat to 350º
1 lg eggplant
3 tbsp olive oil
½ tsp sea salt
¼ tsp black pepper
½ lb ground beef
1 onion, diced
1 red bell pepper, diced
3 cloves garlic, finely chopped
½ c chopped fresh parsley
½ c chopped fresh basil leaves
1¼ c grated Romano cheese
½ c plain bread crumbs
1 egg
2 small tomatoes, chopped

Directions:
Directions:
Cut eggplant in half & scoop out center, leaving thick walls.
Chop eggplant & boil til soft 10-12 min.
Brown seasoned beef. Saute veggies.
Mix together eggplant, veggies, beef, herbs, 1 c cheese, &
¼ c bread crumbs. Add egg.
Fill eggplant halves with mixture.
Top with chopped tomatoes, remaining cheese, crumbs.
Season. Bake on oiled oven tray or baking dish 50 min.
Cool briefly; slice widthwise & serve.
