Spice Rub:
2 tbsp chili powder
2 tsp ground cumin
1 tsp kosher salt
1 ½ tsp dried oregano
1 tsp ea onion & garlic powders
¼ tsp ea cinnamon, allspice, cayenne

Chicken:
8 med boneless, skinless chicken thighs
¾ c (6 oz) pineapple juice
2 tbsp ketchup

Directions:
Directions:
In Instant Pot (pressure cooker), place thighs in a single layer.
Sprinkle with spice blend, then pour over liquids.
Stir to coat evenly.
Cook 15 min at high pressure. (total time ~30min)
Release pressure. Transfer thighs to plate.
To reduce liquid, select Saute program -- 10 min.
Shred chicken. Return to pot, toss to coat.
Serve in tortilla shells with yummy fixin's!
