1/2 cup EVOO
1/4 good quality balsamic vinegar
1 teaspoon Dijon mustard
3 teaspoons good quality maple syrup
1/4 teaspoon garlic powder or 1 clove garlic, minced
sea salt and black pepper to taste

Directions:
Directions:
Place all ingredients except EVOO in blender and blend well.
Slowly drizzle EVOO into blender as it is running until all of oil is incorporated and the mixture is emulsified.
Store in refrigerator (will last for up to a month).

Especially good with the Strawberry Spinach Salad with Glazed Pecans.
