Preheat to 425º

2 cucuzza squash, sliced
3 lg tomatoes, sliced
salt & pepper
⅓ c chopped onion
2 garlic cloves, minced
1 c grated Parmesan
1 tbsp fresh thyme
1 tbsp fresh parsley
¾ c breadcrumbs

Directions:
Directions:
Saute onion & garlic til light brown, 5 min.
Spray med casserole dish, place half of squash on bottom.
Top with half the tomato slices.
Evenly spread onion & garlic on top & season.
Repeat squash & tomato layers.
Sprinkle with Parmesan, breadcrumbs, thyme, & parsley.
Bake 30 min until fork tender.
