4-5 chicken thighs
1 large onion, diced
4 garlic cloves
2 tablespoons olive oil or coconut oil
2 tablespoons curry powder
2 teaspoons turmeric
14 ounces coconut milk
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon cumin
1 teaspoon chili powder
ground black pepper to taste
1 teaspoon red pepper flakes or cayenne
1-2 cups green bell peppers ( 2 peppers)
1 1/2 cups chopped sweet potatoes







Directions:
Directions:
Saute garlic and onion in oil.
Cut chicken into bite-sized pieces.
Add chicken, bell peppers, and sweet potatoes to the pan and season with curry powder, turmeric, and other seasonings.
Cover pan and cook on medium heat, stirring occasionally.
Once veggies are soft and the chicken is cooked, add the coconut milk.
Let the mixture simmer for a few minutes until it begins to thicken.

Serve over hot rice.
