Ingredients:  
-16 oz. pasta shells
-1 (10oz.) package frozen chopped spinach, thawed, drained and squeezed
-2T. dried sweet basil
-4 large cloves of garlic, finely minced
-1/2 cup grated parmesan cheese
-2/3 cup olive oil
-2 T. red wine vinegar
-3/4 tsp. salt
-1/2 tsp. pepper
-Cherry tomatoes as a garnish
-1 jar salted cashew nuts

-Cook shells , rinse in cold water till cool and drain
- In a large serving bowl, combine spinach, basil, garlic, oil, vinegar, parmesan, salt and pepper.
-Toss with pasta and refigerate at least 2 hours (12-24 hours is best).
-Great easy side dish
-serves 8-12
