1 28 oz. can diced tomatoes (or fresh, peeled and diced)
3 T. butter
1 T. olive oil or more to taste
3 garlic cloves (or more), diced
½ peeled onion
3 T. tomato paste (optional but really adds flavor)
1-2 bay leaves
½ C. grated parmigiano (more on the side)
Handful of basil, chopped roughly
Salt and pepper to taste

Boil a large pot of salted water.

In a large pan, melt the butter and olive oil over medium heat.

Add garlic and saute for one minute, stirring all the time to prevent burning.

Add tomato paste and cook for 2-3 minutes, stirring often

Add canned or fresh tomatoes and onion and bay leaf. Lower heat and simmer for 40-50 minutes, uncovered. Stir from time to time.

During last 10 minutes add most of the basil and salt and pepper to taste.

Discard the onion (or eat it separately)

When the pasta is done, drain and add to the sauce, stirring vigorously to cover all the noodles. Keep stirring and add a ladle full of the salted pasta water and most of the Parmigiano.

Plate individual servings and sprinkle with basil and Parmigiano.

This may seem like a lot of work for a simple marinara, but it is well worth it. You can add 1 tsp. hot pepper flakes with the garlic to make it more spicy
