3 large zucchini or mix of summer squash sliced thin lengthwise
1/2 lb arugula baby
1 oz Parm shaved
3 T olive oil
Juice and zest of a lemon
Salt and pepper

Directions:
Directions:
Arugula in large bowl. Drizzle 1 1/2 T oil, 1/4 t salt and pepper and toss. Arrange squash over greens, drizzle with 1 1/2 T oil, lemon juice and zest, salt and pepper. Shave parm over salad
