5 cups peaches (May make less)
4 cups sugar
Juice of 1/2 lemon

Fill a large pan with water. Bring to a boil. Wash peaches. Add to boiling water for about 2 minutes or until you see the peel loosen. Remove with a slotted spoon to a sink with cold water. Peel the skin, slice peaches and remove pits. Place peach slices in a large pan and add lemon juice. Drizzle well with 1/2 sugar, toss and drizzle with remaining sugar. May add more sugar later if needed after tasting while cooking. Let peaches sit at room temperature for about 1 hour or until sugar is dissolved. Place pan, uncovered and bring to a light boil, stirring to prevent scorching. Simmer for 10 minutes and turn off the heat. Allow pot to stand uncovered until it is just warm to touch or room temperature. As soon as it cools, repeat the last step, bring to a light boil for 5-6 times. Bring it to a boil over lower heat and stir to prevent scorching. Put in
hot jars, leaving about 1-inch headspace if you freeze; leave 1/2-inch headspace if you can. Cool. I freeze! May be canned by placing in a canning pot, cover with 1-2-inches of water and process for 15 minutes.
Place on a cloth and allow to thoroughly cool for 12 to 24 hours.
