Dry Rub

4 tbsp brown sugar
2 tbsp chili powder
4 tsp salt
2 tsp ground pepper
2 tsp dry mustard
1 tsp onion powder
7-8 lbs pork side ribs (2 Racks with the back flap removed)


Barbecue Sauce

2 tsp chili powder
2 tsp onion powder
1 tsp garlic powder
4 tbsp butter
1 ˝ cups ketchup
1 ˝ cups apple jelly
1/2 cup apple cider vinegar
4 tbsp (30 ml) molasses
2 tbsp (15 ml) Dijon mustard
2 tbsp (15 ml) Worcestershire sauce
Tabasco sauce, to taste
Salt and pepper to tasteľ

Pork Side Ribs Preparation

Place the racks of ribs on a clean work surface.
Remove the membrane (silverskin) on the bone side of the pork side ribs. If you pry up a corner of the membrane it sometimes pulls off in one piece. I usually use sterilized pliers to assist with this task.


Dry Rub

In a bowl, combine all the ingredients. Set aside.
Place the ribs on a baking sheet and rub both sides of each rack generously with the spice rub.
Cover and refrigerate for at least 1 hour, or overnight.

Cooking the Ribs

With the rack in the middle position of the oven, preheat the oven to 250°F
Place a sheet of heavy duty aluminum foil on a cookie sheet shiny side down.
Position one rack of side ribs on the foil meaty side down.
Cover with another piece of heavy duty aluminum foil shiny side up.
Roll all four edges of the two pieces of foil so that the side ribs are sealed inside the aluminum foil pocket.
Repeat these steps for the second rack of side ribs.
Transfer to a baking sheet. Bake for about 4 hours, or until the meat is tender.
Try not to open the aluminum pack until it is time to place the ribs on the BBQ.

Barbecue sauce

Meanwhile, in a small saucepan over medium-high heat, cook the spices in the butter for 1 minute. Add the remaining ingredients, bring to a boil and simmer over low heat for about 5 minutes or until the sauce becomes syrupy. Season with salt and pepper.

Barbecuing the Ribs

Preheat the grill, setting the burners to medium.
Oil the grate.
Remove the ribs from the foil and grill for 4 to 5 minutes on each side, brushing with half of the barbecue sauce.
Serve with the remaining sauce.
