1¼ granulated sugar
1 ¼ cup heavy cream
½ tsp kosher or sea salt
½ tsp vanilla extract
3 large eggs
1 cup whole milk

Directions:
To make caramel: Add sugar to large saucepan. Over medium heat melt sugar without stirring by swirling pan to melt and brown evenly. When amber colored, stir in heavy cream. It will bubble and foam up, cook and stir constantly until caramel is completely melted. Pour into metal bowl and set aside to cool. Stir in salt and vanilla.

To make custard: Scald milk in saucepan. Lightly whisk eggs in small bowl. Temper eggs by pouring in a 1/3 cup of hot milk while whisking. Pour eggs into saucepan with remaining scalded milk. Over medium low heat cook egg mixture until it starts to thicken, stirring. Do not let boil! To test for correct consistency dip wooden spoon in custard. Run your finger through the custard, when it separates into 2 lines and very slowly fills back in, it’s ready.

Stir custard into caramel. Strain through a fine mesh strainer into container. Cover and chill overnight or at least 8 hours. Next day, freeze in ice cream maker.
