1 lb dried chickpeas, soaked overnight and cooked until soft … or 3 15 oz cans chickpeas, drained
2 to 3 cloves garlic
1/2 cup olive oil plus more for serving
2 tbsp red wine vinegar
1/4 cup parsley, chopped
Salt (optional)

Directions:
Directions:
Put cooked chickpeas and garlic in a food processor or high powered blender and blend until roughly puréed.

Drizzle with oil and vinegar.

Sprinkle with parsley and salt.

Serve with raw vegetables, pita, or good, crusty bread.

This is not really a smooth hummus. It is more rustic, but good and healthy. I mixed the oil and vinegar in and added more oil after. If you want it smoother save some of the aquafaba from the canned chickpeas or cooking water and add to make the consistency you like.
