2 eggs
2 cups sugar
4 cups diced apples (peeled or unpeeled)
1 cup walnuts chopped
2 tsp. cinnamon
1 tsp. vanilla
1/2 cup oil
2 cups flour
2 tsp baking soda
3/4 tsp. salt

Break eggs over apples. Stir with fork. Add sugar, walnuts, cinnamon, vanilla and oil. Mix well. Add dry ingredients. Mixture will be thick.

Pour into greased 9 x 13 pan.
Bake @ 350 45-55 minutes.

Serve warm with whipping cream or cool whip
