There are not exact measurements. I make according to taste. I will give approximates.
Egg roll wrappers 2 packages (I prefer Dynasty brand)
1 ½ lb. Ground pork
1 lb. Shrimp
1 lb. Bean sprouts
2 bags Cabbage slaw and or bok choy
1 can Bamboo shoots chopped
Mushrooms to taste chopped
½ cup Peanut butter or to taste
¼-cup oyster sauce or to taste
Soy sauce to taste
Pepper
Cornstarch
Oil for frying
Beaten egg to seal wrapper

Defrost wrappers but cover so they don’t dry out.
Cook ground pork, add shrimp.
Add bean sprouts, bamboo shoots, cabbage slaw and bok choy
Add mushrooms if using.
Add peanut butter and oyster sauce. Adjust taste. Add soy sauce.
Make a slurry with corn starch to thicken mixture.
When satisfied with mixture, set aside to cool.
Use beaten egg to seal wrapper.
If mixture is too loose, drain some when wrapping.

Fry until golden brown. Drain on a wire rack.

May fry twice for crispiness. Can use air fryer to reheat.
