1 lb angel hair pasta
½ cup extra-virgin olive oil
4 cloves garlic, minced
½ tsp red pepper flakes
1 lemon, juiced, plus ½ lemon, zested (optional)
½ cup dry white wine (optional)
5 tbsp butter
2 tbsp chopped flat leaf parsley leaves
Freshly grated Parmigiano-Reggiano (optional)

Directions:
1. Add pasta to a large pot of boiling water and cook until al dente.
2. Meanwhile, heat a large 12" skillet over medium-high heat. Add the olive oil.
3.Once simmering and hot, add the garlic and red pepper flakes to the skillet, the saute until garlic is fragrant and golden brown, about 5 minutes.
4. Add the lemon juice and white wine and raise the heat to high. Let the liquid reduce for 2 to 3 minutes.
5. Whisk in the butter, add a ladlefull ( ¼ cup) of the pasta cooking water. Remove from heat.
6. Drain the pasta and add it to the skillet along with the chopped parsley and toss.
7. Add the lemon zest and adjust salt and pepper to taste.
8. Serve immediately.

Optional: Add sautéed shrimp.

Adding some of the pasta cooking water to the sauce will thicken it. Other optional spices to add are fresh basil, fresh roma tomatoes.
