7 Tbsp butter plus extra for toast
4 onions peeled & thinly sliced
1 tbsp flour 3 sprigs thyme leaves picked
1 tbsp balsamic vinaeger
14 oz medium cider
21 oz good beef stock
dash of brandy
8 slices baguette
1 clove garlic halved
4 oz gruyere cheese grated

Directions:
Directions:
melt butter over low heat add onions season and cook stirring regularly until caramelised and deep brown for between 90 min. to 2 hours

stri in flour & thyme cook for a couple of minutes. stirring add vinigar & 1/3 of cider scrape brown bits from pan. wisk in the rest of the cider & stock and bring to a boil. simmer for about an hour. meanwhile rub sliced baguettes with garlic butter & toast on both sides.

Add brandy & check seasoning.

to serve ladle into over proof dishes top with baguette and mound of cheese. grill until golden serve immediatley.
