1 cup room temperature shortening
5 cups icing sugar
1 tablespoon lemon zest
¼ cup freshly squeezed lemon juice
Directions:
Directions:
Cream shortening and lemon juice until completely combined.

Add icing sugar one cup at a time, continue to beat on medium speed until frosting is creamy.
Add lemon zest (and 1 drop of yellow food colouring if desired).

Continue to mix. If frosting is too runny add more icing sugar.
