Ingredients: 2 med size eggplants (or 1 large) 2 large eggs, whisked ½ cup all purpose flour 1 Tbsp garlic powder & Italian seasoning 1 tsp black pepper & ½ tsp salt 1 cup seasoned panko bread crumbs ½ cup seasoned breadcrumbs 1 cup marinara 6oz fresh mozzarella, sliced into pieces
Slice eggplant. Gather 3 med shallow bowls. Place whisked eggs in one bowl. Place flour, garlic powder, Italian seasoning, black pepper & salt in second bowl; whisk to combine. In last bowl, whisk together two types of breadcrumbs. Start with coating eggplant in flour on both sides. Transfer eggplant to eggs; coat both sides in egg. Immediately coat eggplant with breadcrumb mixture; set aside. Repeat until all of eggplant slices are fully coated. Place 4-6 coated eggplant slices in air fryer, depending on how many you can fit while making sure they are not touching. Lightly spray both sides of eggplant with olive oil spray. This olive oil step is optional, but will help your eggplant get extra crispy! Cook on air fryer setting 375° 8 min. Flip eggplant slices; add 1Tbsp marinara to top of each eggplant slice. Top marinara with slice of fresh mozzarella; cook 2 more min. Remove from air fryer; add fresh basil, if desired. Repeat until all eggplant slices are cooked! Serve immediately.

Directions: Recipe Tips: Do Not Crowd. When frying eggplant in air fryer, make sure you do not overlap eggplant and does not touch. This will ensure eggplant cooks evenly and gets crispy. Extra Crispy. If you want your eggplant to be extra crispy, don’t skip the light mist of olive oil onto your coated eggplant before frying. Medium Sized Eggplant. We prefer to use small to medium eggplants over large eggplants, as they tend to be sweeter, less bitter and have less seeds. Eggplant skin should be smooth, shiny and slightly firm. Good Quality Marinara and Mozzarella. Besides eggplant, fresh mozzarella & marinara sauce are the stars of the show. A good quality fresh melty mozzarella and rich marinara (not too sweet – watch for added sugar!) will make this dish irresistible! |
