2 cans corn (or 2 freezer boxes of Boyer Sweet Corn)
1 can Ro-Tel
2 c. shredded cheddar cheese
8 green onions, sliced
1 c. mayonnaise
8 oz. sour cream
Handful of cilantro
Optional - red onion or garlic scapes, finely chopped
Fritos or tortilla chips
Directions:
Directions:
Drain corn and Ro-Tel. Mix everything together. Best if chilled for a few hours before serving with Fritos or tortilla chips.
