2 1/4 oz. Packets yeast
1/2 c plus 1 t. Sugar
1 3/4 cup warm water
5 c. All purchase flour
2 t. Kosher or sea salt
1 T oil
Cooking spray
1/3 c baking soda
4c boiling water
Flakey salt1 stick unsalted butter

Directions:
Directions:
1. Dissolve yeast and 1 t. Sugar in warm water and let sit about 10 minutes.

2. In stand mixer with dough hook, combine the flour, remaining 1/2 c sugar, and kosher salt.

3. Spray large bowl w/spray. Place dough in , cover and put in warm place about 1 hour.

4. Preheat over to 425. Line 2 baking pans w/ parchment paper.

5. Put dough on lightly floured surface and divide into 16 parts. Roll about 24 inches long and shape into pretzels.

6. In large bowl of boiling water, mix soda. Dip pretzels in, then place on baking sheet. Add course salt, lightly.

Bake until golden brown. Brush with butter. I Store in airtight container.

You can make the dough, and store in fridge for 3 days before making pretzels .
