3/4 c. butter, divided
2 lbs. sliced mushrooms
1 c. heavy whipping cream
1 large egg
1 T. fresh minced parsley
1 T. lemon juice
1 t. salt
1 t. paprika
2 c. Ritz crackers

Directions:
Directions:
Preheat oven to 350º.

Grease an 8 inch square baking dish.

In a large skillet, melt 1/4 cup butter, sauté mushrooms til tender and liquid has evaporated.

In a large bowl, whisk the remaining ingredients, except the butter and crackers. Melt the butter and add to the crushed crackers. Add mushrooms to the mixture, put in baking dish and sprinkle crumb mixture on top. Cover and refrigerate for at least 8 hours or overnight.

Let casserole come to room temperature, about 30 minutes. Baked uncovered for 30 minutes or until topping is golden brown.
