Directions:Heat oven to 400 degrees. Grease and flour cookie sheet. Heat 1 cup water, the butter, and salt to a rolling boil in a 2 1/2-quart saucepan. Stir in flour. Stir vigorously over low heat about 1 minute or until mixture forms a ball. Remove from heat, cool for 5 minutes.
Beat in eggs, one at time, until smooth. Drop dough by rounded tablespoonfuls about 2 inches apart onto cookie sheet. Bake about 30 minutes or until puffed and golden. Cool. Cut off tops, reserve. Pull out any strands of soft dough from puffs.
Beat whipping cream, confectioner's sugar and nutmeg in chilled medium bowl with electric mixer on high speed until still. Fill puffs with whipped cream mixture, replace tops. Freeze about 2 hours until firm.
Mound puffs on large serving plate, Heat remaining ingredients over low heat, stirring occasionally, until smooth, drizzle over puffs. An alternative is to mound the puffs on a pedestal plate and drizzle with warm caramel sauce and sprinkle with toasted slivered almonds. Wire a gold bow to a bamboo skewer and insert into the top puff for a festive touch.
Chilled sambuca (an anise flavored liqueur), goes nicely with these chocolate covered puffs. |

Notes: Zeppole di San Giuseppe are traditional Italian cream filled pastries which are made for the Feast of St Joseph. March 19th is dedicated to St. Joseph, and this is when the cream puffs are made. Saint Joseph is the patron saint of both families and pastry cooks, so sweets abound on his feast day.
Our grandfather was Joseph, and he married our grandmother who was Mary. Joseph Zinobile was born on St. Joseph's Day and died on St. Joseph the Worker's Day (or maybe the other way around). Nonna would occasionally make these wonderful delicacies on St. Joseph's Day - what a treat!
Spaghetti di San Giuseppe with walnuts, olive oil, and toasted breadcrumbs is also another traditional dish for St. Joseph Day. Another one of Nonna's specialities.
