"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Festive Touches

Throw a past-tasting party. Each guest brings his or her favorite pasta sauce, and you provide two or three different shapes of cooked pastas to serve with the sauces.

Use decorative linen kitchen towels for napkins when serving pasta. Guests will appreciate the "extra covering" if the sauce splatters. Rick says that I need one because I always splatter.

Place a small potted herb plant at each place setting as a party favor for guests to take home.

For an all-Italian evening, rent a video of a film set in Italy, such as Roman Holiday, The Godfather, or A Room with a View.
