1 3-4 pound Corned beef roast
1 onion, chopped
1 large head cabbage, cut into wedges

Directions:
Directions:
Rinse Corned beef in cold water and place in pot. Cover with water and add onion. Bring to a boil and reduce heat to a simmer, covered. Cook 2 hours or until almost tender. Add cabbage to pot and continue to simmer for 30 minutes or cabbage is tender. Turn heat off and let sit with lid on for one hour before serving.
