1⅔ to 1¾ cups of egg white
1 cup + 2 TBS sifted cake flour
¾ cup granulated sugar
½ teaspoon salt
1½ tsp. cream of tarter
1 tsp. vanilla
1 tsp. almond extract
1 cup sifted granulated sugar

Let egg whites stand at room temperature for at least 1 hour.
Set oven at 370º
Sift together the flour and ¾ cup of sugar 4 times.
Sift the 1 cup granulated sugar.

In a large mixing bowl, combine egg whites, salt, cream of tartar, vanilla, and almond extract. Beat on high speed until the whites are stiff and stand in peaks.

On medium speed, sprinkle in the sifted sugar. At the lowest speed, gradually add the flour mixture. Put in the pan. Make circles with a knife and thump a few times to release air.

Bake for approx. 40 minutes.
