I whole chicken
1 dozen boiled eggs, chopped
1 large onion (or 2)
1 whole celery stalk
2 pounds Fine Hoovers corn meal
2 pounds Self rising corn meal
2 sleeves of saltine crackers
10 slices of bread or old biscuits
salt and pepper to taste

Boil chicken with plenty of room for lots of juice. Cool and debone meat.
Next start mixing your corn meals and bake your cornbread, just follow the instructions on the label. Let cool while you chop your onion and celery in small pieces.
This will make a lot.
I like to mix all of the next steps in a big bowl...then add it to my pans.
First Tear the cornbread, light bread, and crackers into small pieces. Pour chicken juice until soupy and mix in chopped eggs, onion, and celery. When well mixed, place in pans and smooth the tops even. Place pats of butter all over the top.
Bake at 400º for about an hour.

This is Aunt Doris's recipe...I use this as the base to my own dressing but, just tweak it a little...I don't add the crackers and only about 4 stalks of celery instead of the whole thing.
