2 c. Instant Yams
2 c. Hot Water
½ c. Sugar
2 Eggs, separated
½ tsp. Salt
1 tsp. Nutmeg
2 Tbsp. Butter
1 c. Seedless Raisins
1 c. Scalded Milk
½ c. Nuts, chopped
2 tsp. Vanilla
Mini Marshmallows

Directions:
Directions:
Stir yams and hot water in a bowl until smooth; add sugar, salt and butter in hot milk. Stir until butter melts. Add yams and egg yolks; mix well. Add nutmeg, raisins, nuts and vanilla. Mix well. Beat eggs whites until stiff. Fold into mixture. Pour into greased casserole dish. Place marshmallows around the top edge. Bake at 325º about 20 minutes.
